We can range from PDOs renowned all over the world such as Parmigiano Reggiano (Cavola dairy), Gorgonzola (Angelo Croce), Asiago, Roman Pecorino, to Italian regional specialties. The contribution of local artisans, skilled in transforming cow and sheep milk into products of excellence, is important.
